An original concept requires a unique name, which in this case is the key to the chef's secrets. Bombay (aka Mumbai) is Kedar's (the restaurant's co-owner) home city. As for 'masala', contrary to common belief in Poland, it is not a sauce. Every resepctable housewife and chef in India, prepares his/her own, perfected over years of trial and error, unique mix of spices for particular dishes. This secret combination of flavours is called 'masala'.
Drop by Warsaw Breweries, if you'd like to taste the one created by the chef o this Indian temple of flavour.
